Ingredients

    large burrito sized tortillas



  • ½
    lb
    ground beef



  • ¼
    cup
    water



  • ¼
    cup
    salsa



  • 1
    tbsp
    taco seasoning

    Mexican style cheese



  • 15
    oz
    can black beans,
    or pinto beans, drained and rinsed

  • sour cream, lettuce, guacamole, tomatoes and more

Instructions

  • Preheat oven to 425 degrees Fahrenheit (220 degrees Celsius).
  • In a large pan on the stove, add the ground beef. Break the beef up and cook it thoroughly until browned. Once browned and cooked, stir in the water, salsa, taco seasoning, and beans. Remove from the heat.
  • Grease a muffin pan with non-stick cooking spray to prevent the tortillas from sticking.
  • Using a cookie cutter or kitchen scissors, cut 4-5 inch circles in the tortillas. You should get about 2 circles from each tortilla. Place the mini tortilla circles on a plate and microwave for 30 seconds. This will help soften the tortillas, making them easier to mold into the muffin pan.
  • Press the softened tortillas into the muffin tin cups, creating a small bowl shape with each tortilla.
  • Place the beef filling into each of the tortillas in the muffin pan. Sprinkle the Mexican style cheese generously over the top of each taco cup.
  • Bake for 4 minutes, or until the tortilla is golden brown and the cheese is melted and bubbly. Keep a close eye on them to prevent burning.
  • Remove from the oven and let cool slightly. Top with your favorite taco toppings, such as sour cream, lettuce, guacamole, and diced tomatoes.
