Instructions:

  • Begin by preparing the dry pinto beans. It’s important to sort through them carefully, removing any small stones, broken beans, or debris that may be present.
  • Rinse the sorted beans thoroughly under cold running water to clean them completely.
  • Place the rinsed beans into a large bowl and cover them generously with water. Let them sit and soak for 1-2 hours. If you have more time, soaking them longer (even overnight) can help reduce cooking time and improve digestibility.
  • After soaking, drain the water from the beans. Transfer the soaked beans into a large pot or Dutch oven on the stove.

  • When the pasta has about 3 minutes left of cooking time, add the frozen broccoli florets directly into the pot with the pasta. Continue to cook for the remaining 3 minutes, or until the broccoli is tender-crisp.
  • Before draining, scoop out 1/4 cup of the starchy pasta water and set it aside. This reserved water will help create a light, silky sauce.
  • Strain the cooked pasta and broccoli thoroughly using a colander.
  • Return the strained pasta and broccoli to the large pot.

  • 6 oz can tomato paste
  • 1 tsp cumin
  • 1 1/2 tsp chili powder
  • 1 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp dried oregano

Instructions:

  • In a large pot or Dutch oven on the stove over medium-high heat, add the ground turkey and diced onion. Use a wooden spoon to break up the turkey as it cooks. Cook until the turkey is no longer pink and the onion is softened, about 5-7 minutes. Drain any excess fat.
