Instructions
- Preheat oven to 400 degrees F (200 degrees C).
- Spray a 12-cup muffin tin with oil spray. Place approximately 1/4 cup of shredded hash browns into each muffin cup.
- Season the hash browns with salt and pepper. Lightly spray the tops of the hash browns with oil spray. Bake in the preheated oven for 12 minutes, or until lightly golden.
- Remove the muffin tin from the oven. Gently make a well in the center of each hash brown cup. Crack one egg into each well.
- Sprinkle the eggs with a pinch of salt and pepper to taste. You can also add other seasonings as per your preference (
