  4. Cover the skillet with a lid and let it simmer for 10-12 minutes, stirring often. Cook until the potatoes are fork-tender. If the mixture starts to dry out or stick to the bottom of the pan, add a little more water, 1/4 cup at a time.

  3. While the sausage cooks, in a large bowl, whisk together the eggs, milk, salt, pepper, onion powder, garlic powder, and paprika until the yolks are broken and ingredients are well combined.
  4. Spray a 9×13 inch baking dish generously with non-stick spray. Spread the frozen potatoes O’Brien evenly across the bottom of the dish, then sprinkle the cooked sausage over the top.
  5. Pour the egg mixture over the potatoes and sausage, ensuring everything is well covered.
  6. Bake for 45-55 minutes, or until the egg mixture has set completely in the middle and the top is lightly golden brown.

  3. Add the remaining ingredients: the can of diced tomatoes, penne pasta, milk, 1/2 cup water, salt, pepper, and Italian seasoning. Stir everything together thoroughly.

  3. Stir in the flour into the vegetable mixture, cooking for 1 minute to remove the raw flour taste.
  4. Slowly whisk in the milk and the reserved 1/2 cup of pasta water until a smooth sauce begins to form.
  5. Once the sauce begins to simmer (do not let it boil vigorously), add the drained tuna, salt, pepper, Italian seasoning, and paprika. Stir well and cook for a couple of minutes until the tuna is warmed through and the flavors meld.
