Ingredients
- 2 large chicken breasts, sliced horizontally into 4 pieces
- 1 tbsp zesty Italian seasoning, or Italian seasoning + salt and pepper
- 2 eggs
- 1 cup Italian style panko breadcrumbs
- 2 tbsp melted butter
- 2 zucchini, sliced
- 2 yellow squash, sliced
- 1 tbsp olive oil
- ½ tbsp salt
- 1 tsp pepper
- ½ cup marinara sauce
- 1 cup mozzarella cheese
Instructions
- Preheat the oven to 400°F (200°C). Line a large sheet pan with foil or parchment paper for easy cleanup.
- Season both sides of the sliced chicken with zesty Italian seasoning.
- In one shallow bowl, beat the eggs. In another, combine the Italian panko breadcrumbs and melted butter. Dip each chicken piece in egg, then thoroughly coat in the breadcrumb mixture, pressing firmly.
- Place the breaded chicken on one side of the sheet pan. On the other side, toss the sliced zucchini and yellow squash with olive oil, salt, and pepper. Spread vegetables out evenly in a single layer.
- Bake for 12 minutes. Carefully flip the chicken pieces, then continue to bake for an additional 12 minutes, or until the chicken is almost cooked through (internal temperature around 160°F/71°C).
- Turn the oven to the broil setting (high heat). Broil the chicken for 2 minutes until lightly golden and crispy. Remove from oven, flip the chicken, then top each piece with a dollop of marinara sauce and a generous sprinkle of mozzarella cheese. Return to the broiler for 2 minutes more, or until the cheese is beautifully melted, bubbly, and slightly golden. Watch carefully to prevent burning. Serve immediately!
